“Ethika was born out of a desire to do something a little more meaningful than just slinging drinks,” co-founder Simon tells us.

“My background is in the traditional on-trade cocktail scene, and after 10 years or so I really wanted to do something new. So I started Ethika with my wife Rosanna, who’s a designer by trade but has plenty of experience tending bars, too. Our aim is to be all about the good stuff. Interesting stuff. Tasty stuff! So we make beautiful cocktails and delicious bites using fair-trade, ethical or locally sourced small-batch ingredients.”

The duo opened a cocktail operation at Elephant and Castle’s foodie hotspot Mercato Metropolitano two years ago, then expanded to Camden’s ecologically-focused at Buck Street Market last year, adding delicious street food plates to their offering.

The new destination chimed perfectly with their core values around using only sustainable, seasonal produce, and supply chains. “When we’re thinking about food and drinks (and we do that quite a bit) we’re always careful about the brands we want to work with and the products we want to support,” says Simon. “Thinking about how, why and where they come from. We’re always on the lookout for more natural, traceable and unadulterated ingredients and we’re super proud that all of our menus are made using only products that live up to these standards.”

Their enviable rooftop vantage at Buck Street is an ideal summertime spot for an elegant spritz (they do seven different aperol-based cocktails), organic dry-farmed wines, other spirits from Highgate’s Sacred Distillery or locally brewed pints on tap from London Beer Factory. They’re also renowned for mixing up some serious low and no alcohol cocktails.

Inspired by Rosanna’s Italian roots, Ethika serves Mediterranean-style tapas, with broad influences from Southern Europe and North Africa. Their rooftop container offers locals the chance to indulge in the Italian tradition of aperitivo, as the sun gently sets over Camden Town.

 So, after whetting the appetite nicely, what does Simon suggest we try from the food menu?

What to eat at Ethika tonight?

“If I was ordering from Ethika tonight, I’d go with the Polpette Al Sugo, one of our signature dishes of homemade Italian meatballs in tomato sauce with melted provolone cheese on top. Everyone loves these, and they pair really well with our Crunchy Polenta Fingers. Polenta is traditionally a staple of the mountainous North of Italy. It’s made from cornmeal and we cook it thick and allow it to set before cutting and frying it. It’s a great alternative to potato to make fluffy golden chips.

“For something plant based, I think the Kimchi marinated grilled tofu with Asian slaw and pickled cucumber can’t be beaten. We make a homemade vegan kimchi (as traditional kimchi is made with anchovies) and marinate the tofu for 24-hours, which is what gives it the super colourful skin.

“To round off the meal, I’d want a bit of greenery and for me the Grilled Tenderstem Broccoli is delicious. Turkish inspired, the broccoli is lightly chargrilled and served on a bed of süzme, which is strained yogurt with mint, chilli, preserved lemon & crispy shallots.”
