Remoli is the new premium grab ‘n go fresh pasta offering at St Pancras station from established Italian restaurateurs Pasta Remoli. Chef Simone Remoli says the concept is “all about simplicity: choose your pasta, choose your sauce and add cheese.”
Does he have a favourite from his menu? “It has to be the truffle ravioli with creamy mushroom sauce,” he smiles. He debated whether to bring this to the new station menu but eventually decided he just couldn’t leave it out. “There’s a good level of truffle flavour – it’s not too overpowering and the creamy mushroom sauce just balances the dish. I find it incredibly moreish.”
Though Remoli is housed in the International station, it also makes for an ideal destination for local regulars. The freshly made food is perfect for enjoying on the move or back at the office, as we return and savour the best bits of the old routine. “There is so much for everyone on the menu: vegan pasta, gluten free options, ravioli and a variety of pasta shapes and sauce,” Remoli explains. “Sometimes you just need carbs and comfort food.”
The restaurant’s opening has been a tumultuous one but Remoli says he tries to look for the positives in situations and it has shown him how agile the business is. “When Covid first hit, we were one of the first business to close our doors – ahead of Boris saying so – and launching a pasta meal kit home delivery service. We were quick to pivot the business and look for new opportunities.” Amazingly, he was able to keep on all of his staff, something he says was extremely important: “they are family.”
“The worst times have been not being in the kitchen and seeing a full restaurant because we were obviously closed. That was hard for me,” he reflects. But being offered a space within St Pancras International for his Remoli concept during the pandemic has been wonderful. “It’s a lovely feeling that the team at St Pancras believe in my product as much as I do and we are super happy to be here.”
How does operating in a station compare to his other outlets? “It’s different, but in a good way. We are a grab and go restaurant so we can’t offer the full hospitality experience in that regard and naturally the footfall is higher so speed of service is key, but we are confident the quality of our takeout pasta dishes will remain very high.”
Looking to the future, Remoli plans to get his home delivery service up and running again, this time delivering nationwide. He is also keen to restart his weekend pasta masterclasses, which were a great success pre-pandemic.
